Troy Davis, the pit-boss and owner of Troy’s BBQ which first opened in 1996, takes barbecue very seriously – and it shows! He says the first thing you need to worry about is the fire. Troy’s secret is cooking with “no flames, just smoke.” Of course, the choice of meat is important, too. His preference is three-and-a-half-down spareribs. But perhaps the most important element of the wonderful barbecue you’ll find on menu at Troy’s is the TLC that goes into preparing it. “You’ve got to have TLC: tender, loving care. You’ve got to watch them while they cook; you can’t walk off and leave them. I turn them consistently — I cook 45 to 90 slabs at a time — and baste them every 15 or 20 minutes,” Troy says. “It’s a long, slow process, but that’s the only way to get tender ribs. You got to use yourself as the rotisserie.”
