A Recipe for a Happy Holiday

As a real estate agent, I spend a fair amount of time in my car. I’m not complaining (at least most days I’m not!). I specialize in Boca Bayou real estate in Boca Raton. That means that I’m usually driving on roads dotted with palm trees and sporting lush green landscaping – even in the depths of winter, I’ll see luxurious blooms adding fabulous shades of color to the scene.

When I don’t have a client who is interested in one of the lovely Boca Bayou condominiums for sale in the car with me, I often turn on NPR. If you’re not familiar with it, you’re missing out! NPR – which is National Public Radio, is probably best known for its news shows but there are also shows that are full of humor, culture, intriguing ideas and fabulous storytelling.

Anyone who has ever listened to “Morning Edition” – you can find it on our local NPR station, WLRN 91. 3 FM, weekdays from 5 to 8 a.m. – at this time of year has undoubtedly heard long-time correspondent Susan Stamberg talk about her mother-in-law’s recipe for cranberry relish. It is reported to be Pepto Bismol-pink, but every year Stamberg insists it is delicious.

Mama Stamberg’s Cranberry Relish

2 cups whole raw cranberries, washed
1 small onion
3/4 cup sour cream
1/2 cup sugar
2 tablespoons horseradish from a jar (“red is a bit milder than white”)

Grind the raw berries and onion together. (“I use an old-fashioned meat grinder,” says Stamberg. “I’m sure there’s a setting on the food processor that will give you a chunky grind — not a puree.”)

Add everything else and mix.

Put in a plastic container and freeze.

Early Thanksgiving morning, move it from freezer to refrigerator compartment to thaw. (“It should still have some little icy slivers left.”)

The relish will be thick, creamy, and shocking pink. (“OK, Pepto Bismol pink. It has a tangy taste that cuts through and perks up the turkey and gravy. It’s also good on next-day turkey sandwiches, and with roast beef,” Stamberg says.)

Makes 1 ½ pints.

“It sounds terrible but tastes terrific,” Stamberg has said repeatedly. I haven’t been brave enough to mix it up in my Boca Bayou condo kitchen – even though pink is the color most often associated with Boca Raton.  If you decide to add it to your Thanksgiving table, please let me know how it turns out!
